Potato Salad with Capers and Lemon

Ingredients
6 medium cooked potatoes (baked or boiled)1 small onion, diced1/2 cup chopped scallion1/4 cup dill pickle relish or diced dill pickles3 Tbl Capers1/4 cup chopped parsley2 eggs, hard boiled and chopped1/4 cup yellow mustard3/4 cup Light mayonnaiseJuice of 1 lemon
Directions
Boil or bake potatoes and dice. Dice vegetables and mix all ingredients except potatoes in medium sized bowl. Add potatoes and mix well. Refrigerate for 4 hours or overnight.
