Apple/carrot Oat Bran Muffins

1 medium tart apple (peeled, cored and thinly sliced)1 tbsp lemon juice1 1/8 cups whole wheat flour1 cup oat bran1 tbsp baking powder1 1/2 tsp ground cinnamon1/4 tsp groung nutmeg1 cup unsweetened applesauce1/2 cup skim milk1/4 cup firmly packed brown sugar1 egg white2 tbsp shortening replacement (I used applesauce)1 cup grated carrot
Preheat oven to 425 degrees. Line muffin tins with papers and spray with non-stick spray.
In a small bowl, toss apple slices with lemon juice and set aside. In a large bowl, combine flour, oat bran, baking powder, cinnamon and nutmeg. In a separate bowl, mix applesauce, milk, sugar, egg white, shortening replacement, carrots, and the apple slices with lemon juice. Combine the wet and dry ingredients, nd mix well.
Spoon the batter into muffin cups and bake 15 to 20 minutes, or until a toothpick inserted in centre of muffin comes out clean.
