Escarole and Bean Soup - Vegetarian

Ingredients
Beans, black, 1 cup (1 can)Beans, pinto, 1 cup (1 can)Tomato Paste, 0.5 cup (small can)Olive Oil, 2 tbspGarlic, 4 clove Onions, raw, .25 cup, choppedPepper, black, 2 tbsp*Escarole, 8 cupSalt to taste
Directions
In a pot add olive oil, garlic and onion and saute until soft.

Steam Escarole until tender.

Add Escarole to pot and simmer with onions and garlic for 5 min.

Add 6 cups of water (can use water from the steamed escarole)

Add tomato paste and beans, simmer for 10 minutes

Serving Size: Makes 6, 1 cup servings
