Baked Fried Zucchini

1 large egg2 T water1/2 c Italian bread crumbs1/2 T onion powder1/2 t garlic powder1/2 t saltZucchini (1 lb)
Pre-heat oven to 425degrees. Spray Cookie sheet with Pam.
Beat egg & water in small bowl & set aside.
Mix bread crumbs, onion powder, garlic powder & salt in separate bowl.
Rinse & peel zucchini. Slice into rounds, approximately 1/4 inch thick.
Dip sliced zucchini into eggwash mixture, allowing extra to drip off. Place in bread crumbs one at a time; shake to coat. Place on prepared cookie sheet. Continue to bread all zucchini, placing on cookie sheet so they are not touching.
Bake at 425 degrees about 15 minutes. Turn over and back an additional 5-7 minutes.
Makes 3 - 1/3 lb servings (approx 7 slices each).
