Spinach Rice

Ingredients
1 cup Minute Brown Rice, 2TBSP olive oil, 1/2 medium Onion, 3 cloves Garlic, 1 cup fresh Spinach, 2 Carrots
Directions
Preheat oven to 350F
In a skillet saute minced garlic and onion in olive oil
Add spinach and wilt it, add even more if you like
Place mixture into baking dish with 1 cup rice & 1 cup water
Peel, slice and place carrots on top
Bake at 350 until rice is tender (great with Greek yogurt), salt & pepper to taste
