1 lb. skinless chicken breasts, cut into bit-sized pieces.3 cups fresh mushrooms, sliced1/2 cup onion, chopped2 cloves garlic, minced2 cups fresh tomato, chopped3/4 cup red wine1/4 cup water1/4 tsp black pepper
1. preheat non-stick skillet over medium heat, cut chicken into large portions and brown well on all sided. Remove chicken and set aside.
2. Saute mushrooms, onions and garlic until tender.
3. Add browned chicken ,and tomatoes, wine and seasonings. Cover and cook over low heat 40-45 minutes.
4. Uncover and cook 10-15 minutes to thicken liquid.
5. Serve over rice.
Serving Size: 8 servings for women, 4 servings for men.
