4 chicken breasts, diced2 large Bananas, fresh, slicedCoconut Milk, 400mlOlive Oil, 2 tbsp (remove)Onions, raw, 1 medium, slicedPeppers, sweet, red, fresh, 1 medium/large, slicedMushrooms, fresh, 8 medium, halved350/400ml good chicken stock (made with 1 knorr chicken stock pot)1 jar of Bart Veeraswamy Medium Moglai Curry Paste 150g (buy it from Waitrose) or other curry paste that you like
1. Fry onion and pepper in olive oil until starting to brown.
2. Add mushrooms fry until cooked.
3. Add chicken fry until sealed.
4. Add curry paste, fry for a minute.
5. Add stock and coconut milk. Heat through for 20 minutes with lid on.
6. Add banana and cook for no more than further 5 mins.
6. Serve with basmati rice.
