1/3 cup sugar3/4 cup vinegar1/3 cup olive oil1 tsp salt1/2 tsp pepper1 can green beans, drained1 can chickpeas, rinsed and drained1 can corn, drained1 cup each chopped celery, red onion and red pepper1 cup cauliflowerets1 can ripe olives, drained
Bring the sugar, vinegar, oil, salt and pepper to a boil. In a large bowl, combine remaining ingredients. Add sugar mixture and toss to coat. Cover and refrigerate several hours or overnight. Serve with slotted spoon. 12-14 servings (1 cup each)
