Black bean and Ham soup

Onions, raw, 3 medium Celery, raw, 2 stalkCarrots, raw, 2 largeGarlic, 3 clovesBeans, black, 6 cup or 1 lb dryHam Bone (want about 3c diced after removing from bone)Water, 6 cupsBeef broth or bouillon, 2 can (10.5 oz), Paprika, 1 tbsp Pepper, black, 1 tbsp Jalapeno Peppers, 1 pepper
Sautee onions & cerely for about 3 minutes without browning. Put in large pot. Add remaining ingredients. Combine well and bring to a boil. Simmer low about 2.5 hours, stirring occasionally. Remove meat from bone and discard bone. Cool the soup overnight. Skim fat off top.
If desired, puree soup in blender before reheating.
Serve with lemon slices on top. About 12 servings.
