Cauliflower and Potato Mash

Ingredients
4 cups steamed cauliflower (reserve 1/2 steaming liquid)1 cup instant mashed potato (as packaged)1/2 cup reduced fat sour cream2 TBS fresh chives
Directions
Steam cauliflower until extremely tender, and place in food processor. Process until very smooth. Place 1 cup of instant mashed potatos into a small bowl. Add 1/2 cup of reserved steaming liquid. Toss briefly with fork, and add to the pureed cauliflower. Let rest for 1 minute. Add sour cream and chives. Process again until well blended. Texture should be the same as "regular" mashed potatoes, or maybe a little thinner.

Makes 4 generous servings (about a cup each)
