Authentic Red Curry Receipe

Ingredients
15.5 oz Hurst's Red LentilsRed Curry Seasoning Packet (Included with Lentils)2 Tablespoon Olive Oil1 Cup Onion, finely chopped.2 Cloves Garlic, chopped1 Can tomato Paste (6 oz)1 Cup diced potato1 Can Coconut milk (14 oz)7 cups water
Directions
Rinse Lentils in cold water.
In a large pot over medium high heat, saute onions and garlic with olive oil.
When onion becomes translucent (4-5 minutes) add tomato paste, potatoes, cononut milk and water. Stir periodically until mixtures reaches a boil. Reduce Heat to low , add seasoning packet and simmer miture for 15 to 30 minutues.
