Baked Vegetable Samosa

Ingredients

1lb. potatoes, diced and peeled3 cloves garlic, minced1/2 c. onion, chopped1 tsp. ginger1/4 c. vegetable broth1 tsp. curry powder1 tbsp. coriander seeds1 tsp. turmeric1 tsp. lemon juice1 c. frozen peas16 wonton wrappers
Preheat oven to 350 degrees.
Saute potatoes, garlic, onion, and ginger in vegetable broth.
Cover and cook for 10 min. until potatoes cook down. Do not brown potatoes.
Add remaining ingredients except wontons. Cook until peas are cook through.
Divide mix evenly between the wrappers. Brush with water.
Bake until golden brown.
serving = 1 samosa

I'm sad b/c I followed recipe to a "T" , but found that my potatoes took 20+ minutes to boil down & that amt. of coriander seed was so strong that it overpowered the other spices. The idea of using won-ton wrapper is very clever and time-saving but it was not anywhere close to samosa dough. :S - 7/27/08
