Chow Mein Caserole

Ingredients
1 lb lean ground beef1 cup celery chopped1/2 cup onion chopped1/2 cup Minute Rice or other instant rice (uncooked)1/2 tsp salt1 can (4oz) mushroom sliced or stems & pieces 1 can (15.5oz) Chicken with Rice soup1 Tbsp brown sugar packed2 tbsp Soy sauce (reduced sodium or regular)1 tsp Butter or Margarine1 1/2 cups Rice noodles (can use Chow Mein noodles but adds more carbs/
Directions
Brown the ground beef, Drain
Pour boiling water over rice and salt in greased casserole dish
Stir in remaining ingredients except noodles, cover and bake in 350 degree oven for 30 minutes. Uncover, stir and return to oven uncovered for 30 minutes,
Sprinkle noodles on top to serve or serve noodles as a side topping.

Serving Size: Serves 5 generously. Double it for a crowd
