Spicy Pomegranate Tuna Salad

Ingredients
6 cans Tuna in water, drained1 cup red onion, finely diced1 cup bell pepper, finely diced1 cup celery, finely diced1/3 cup Patak's Chile Relish1 whole fresh pomegranate (separted arils)1/2 cup cider vinegar1/2 cup fat-free plain yogurt1/2 cup mayonnaise1/4 tsp ground cumin seed1 tsp ground pepper1 tsp curry powder
Directions
Combine all ingredients and mix well.
Serve on 100% whole wheat bread, or over a bed of crisp fresh lettuce.

Note: if pomegranate is unavailable, try 1 cup dried cranberries, golden raisins, diced apples, or one small can of mandarin orange sections.
You may increase the protein content by adding 1 cup of sunflower seeds or slivered almonds.

    You could substitute cooked, diced chicken or turkey breast for those who are allergic to fish. Also, mayo comes fat-free as well. That would take the calorie count down a little more. - 9/27/10

    It is not too bad. I would decrease the amount of cider vinegar. Also, Patak Chile Relish is hard to find so I used regular relish instead. It had a refreshing crunch to it and it was good with toasted whole bread. - 11/10/08
