Indian Eggs

Ingredients
Olive oil4 small lean spicy sausage (eg chorizo)400g can Lentils400 g Craigs Indian Style tomatoes (label says it contains onion, curry spices (including chilli), salt, garlic, mustard seeds.)4 eggs2 Tblspn parsley or coriander.
Directions
Fry sausages in oil, add lentils and indian tomatoes, make hollows and break each egg into. Place under grill to finish.

Garnish to serve. Side of crusty bread or salad.
