Alton Brown's Roasted Almonds

1 Tbsp ground ginger1 tsp kosher salt2 tsp dark sesame oil1 dried arbole chili16 oz whole almonds1 Tbsp low sodium soy sauce3 tsp Worcestershire Sauce
Preheat oven to 250.
Combine ground ginger and kosher salt in a big bowl.
Heat olive oil and dark sesame oil in a large pan. crumble one dried chili (without seeds). Cook over medium heat for 30-45 seconds or until you can smell the chili.
Add almonds. Toss to coat. Cook for approximately 5 minutes to toast.
Add soy sauce and Worcestershire sauce. Cook for 1 minute.
Put into the bowl with ginger and salt. Toss to coat.
Lay out on a sheet pan lined with parchment paper.
Bake in the over for 20 minutes.
Cool for 30 minutes.
