El Pollo Loco, 6 inch corn tortilla, 8 serving (remove)*Cheese veggie shredded monterey jack & cheddar Galaxy Nutritional Foods, 0.50 cup (remove)*Enchilada Sauce - Old ElPaso, Mild, 0.50 cup (remove)*Beef, Ground, 93% Lean, Cooked, 4 oz (remove)
Cook, ground beef. Drain any grease. Add Taco seasoning and water according to the package directions. Heat enchilda sauce in seperate pan. Once heated dip tortilla shells in the enhilda sauce and place in baking pan. I get 4 shells overlap on the bottom. Place 1/2 Cup of ground beef ontop of shells. Place 1/4 Cup of soy cheese ontop of ground beef. Layer with another tortilla dipped shells. On top of that layer with 1/4 cup of enchilda sauce and 1/4 cup of soy cheese. Cook at 350 for approxiamtely 30 min.
