Not-Beef Noodle Soup

Ingredients
Scallions, raw, 1 cup, chopped8 cups of water4 cubes Not-Beef Bouillon6 oz Rice Noodles8 oz cubed tofu
Directions
Dissolve cubes in water, add cooked noodles and pressed/cubed tofu and let simmer 20 minutes. Put raw scallions in the bottom of the serving bowl and pour hot soup over. May also add other raw veggies: mushrooms, peppers, bamboo shoots, etc.

Serving Size: makes 3 huge bowls of brothy soup or 6 smaller ones. Great for when you are sick.
