Sweet Potato Custard Cups

1 cup mashed cooked sweet potato1/2 cup mashed banana1 cup unsweetened almond milk1 Tbsp. packed brown sugar2 Tbsp. Stevia cup for cup1 tsp. Ground Allspice1/4 tsp. Vanilla Extract1 large egg1/2 tsp. salttopping:1 oz. raisins1 tsp. ground cinnamon1 Tbsp. Stevia cup for cup
1. In a medium bowl, stir together sweet potato and banana.
2. Add milk, blending well.
3. Add brown sugar, 2 Tbsp Stevia, Allspice, vanilla, egg, and salt, mixing thoroughly.
4. Line a 12-count muffin pan with paper baking cups and distribute batter evenly into cups.
5. Prepare topping: Combine raisins, 1 Tbsp Stevia, and cinnamon; sprinkle over top of each cup.
6. Bake in a preheated 325º F oven for 20 minutes or until a knife inserted near center comes out clean.
