Crock Pot Sante Fe Chicken

24 oz (1 1/2) lbs chicken breast14.4 oz can diced tomatoes with mild green chilies15 oz can black beans8 oz frozen corn1/4 cup chopped fresh cilantro14.4 oz can fat free chicken broth3 scallions, chopped1 clove garlic1 tsp onion powder1 tsp cumin1 tsp cayenne pepper (to taste)salt to taste
Drain black beans.
Add black beans, tomatoes, frozen corn, cilantro, chicken broth, garlic, onion powder, cumin, and cayenne pepper to crock pot. Season chicken with salt. (I also used crushed red pepper and garlic seasoning). Then place chicken on top of mixture.
Cook on low for 8-10 hours in crock pot or 4-6 hours on high. Serve over rice.
