Breakfast Souffle

Ingredients
2 eggs4 slices of bacon, cooked crisply2 tbsp milk1/2 cup greens (kale, spinach, arugula)1/4 cup shredded gouda1 small red potato2 tbsp chopped white onionsolive oil for sauteeing
Directions
Cook the bacon, set aside on paper towels to drain. Meanwhile, cook onions in olive oil until slightly translucent, then add grated red potato and cook until soft. Remove potatoes from pan, add a little more olive oil, and cook greens until wilted.

In a small bowl, whisk together eggs, milk and cheese. Add bacon, greens, and potatoes. Pour into baking dish (I used medium-sized creme brulee dishes). Bake for 1/2 hour at 375*.
