3-potato au gratin

* 2 sweet potatoes (the orange-fleshed kind) * 2 baking potatoes * 2 yams (aka white sweet potatoes) * Garlic, 2 cloves * 1/2 Onion, diced * Olive Oil, 1 tbsp * Cheddar Cheese, 2 cup, shredded * Milk, 1%, .5 cup * Gruyere Cheese, 1 cup, shredded
Cut all the potatoes into bite-size pieces. Saute garlic and onion in the olive oil, add in the white sweet potatoes so they get a head start on cooking. When garlic and onion are translucent, transfer the mixture to a 9x13 baking dish, adding in the other potatoes. Pour over milk and the gruyere. Place in a 350 oven for about 40-45 minutes. In the last few minutes, top w/ the shredded cheddar and let it melt.
