Easter braid (Fonott kalács, Hungary) (20 slices, 1srv=1sl=25g)

Ingredients
Flour, white, 2 cup (500g)Granulated Sugar, 70 gramsYeast, bakers, 0.1 ounceMilk, 3.25%, 300 mLLemon Peel, 1 tbspEgg Yolk, 2 largeEgg, fresh, 1 largeRaisins, 30 gramsButter, 70 grams
Directions
Sieved the flour into a bowl, mix in the yeast.
Create a recess in the middle, and add into it the warm milk, sugar, egg yolks, lemon peel and the previously little melted butter.
Mix thoroughly by hand or machine. Knead, pour lightly flour on top, cover with a kitchen cloth, and let the dough in a warm place for approximately 30-40 minutes to let it rise to twice the volume.
When risen, pour it onto a board lightly covered with flour, sprinkle the raisins on top and knead slightly.
Divide into 3 parts, create rods and braid together.
Beat the whole eggs with some milk, and spread thoroughly the all over the surface.
Let it rest for 5-10 minutes.
Fry in a 180-190 degree preheated oven for 20-30 minutes.
Just before the time expires, take out to spread again with the egg-milk mix, then complete the frying.

Serving Size: 1 cm slices, approx 35g per slice.
