Jamaican Easter Bun

Ingredients

1/4 cup butter1 cup granulated sugar1 bottle "Dragon" Stout1/4 cup orange marmalade1/4 cup honey (optional)2 eggs3 cups flour2 teaspoons baking powder1 teaspoon nutmeg1 teaspoon cinnamon1 teaspoon allspice1 tablespoon brown coloring1 cup mixed fruits (raisins, cherries, mixed peel)3 teaspoons vanilla extract
Heat together Dragon Stout Butter and sugar, then cool
Stir in slightly beaten eggs, vanilla, browning and marmalade
Stir dry ingredients togegher in a bowl
Add dry ingredients to wet ingredents mix well. Pour into greased loaf pan baked in 325 degrees oven for 15 minutes. Turn down oven to 300 degrees and bake for an additional 1 hour or until center is dry.
