Pancakes On The Go

Ingredients
1/2 cup all-purpose flour1/2 cup whole wheat flour1/2 cup plus 2 TBSPs quick-cooking oats1/3 cup packed brown sugar1/2 tsp baking soda1/2 tsp salt1 egg1 1/3 cups buttermilk2 TBSPs vegetable oil
Directions
In a bowl, combine the first 6 ingredients. In another bowl, beat eggs, buttermilk, and oil.
Stir into dry ingredients and mix well. Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes.
Cook until the second side is golden brown.
Yield: About 15 medium to small pancakes
