1 medium Red Onion1 medium Eggplant1 large Green Pepper1 large Red Pepper1 large Yellow Pepper1-2 Portobello Mushroom Caps2-3 Leeks2 medium Zuchini2 medium Yellow Squash2 Ears Corn2 large Tomatoes1/2 cup Olive Oil2tbsp Pepper1tbsp Salt
Pre-heat grill or broiler (about 400 degrees). Cut in half all veggies, slice mushroom caps into strips, keep corn on cob. Rinse and pat dry. Mix oil, salt, and pepper and brush onto all sides of veggies. Grill/broil til skins start to char, or soften up but still firm (cooking time will vary for the veggies, so watch and wait). Remove from grill/broiler and let cool. Cut/chop veggies into 1/2 inch pieces, toss with remaining oil/seasoning mixture. Eat cold,room temp, or warm. Adding rice or orzo is an option, not sure about calories though. Makes 8 to 10 servings as a side dish.
