yummy DF coconut-berry muffins

Ingredients
shredded coconut-unsweeted/untoastedhoney or agave nectar walnutsegg whitescoconut oil ( can sub* any oil :)blackberries or blueberries3-4 drops vanilla steviashredded coconut-toasted
Directions
take first three ingredients and pulse in a food processor until mixed together-then add egg whites one at a time and finish with oil/agave nectar and finally add blackberries. (Mixture will be a purple hue). divide mix into 6-8 greased muffin tins. Bake at 375 to 400 degree F for about 7 to 11 minutes. Check after 6 min. Do not overcook...Take out and top with raw sucranat sugar and toasted coconut. Yum :)
