Black Beans And Rice - Low Sodium Low Fat

Ingredients
3.5 cups canned/drained Black Beans - No salt Added (365 Brand - Whole Foods)3/4 cup Whole Grain Brown Rice (Publix Natural)1 teaspoon olive oil1 large onion, chopped2 cloves garlic, chopped1 cup chopped tomato (seeds eliminate)1.5 cups low sodium, low fat vegetable broth1 teaspoon cumin.25 teaspoon cayenne pepper1 jalapeno chopped.25 cup cilantro chopped (optional)
Directions
1) In a stockpot over medium-high heat, heat the oil. Add the onion, garlic, tomato and jalapeno and saute 4 minutes. Add the rice and saute for 2 minutes.

2) Add the vegetable broth, bring to a boil, cover and lower the heat and cook for 40 minutes. Add the spices and black beans cook 2 minutes to warm and combine.

3) Lightly grate low-fat cheddar cheese over top and add small dollop of low-fat sour cream. Lightly sprinkle cilantro and serve.
