Portuguese Sausage and Kale soup

Ingredients
1 T Olive Oil6 oz Chorizo sausage, cut into coins1 large onion, chopped3 carrots, sliced2 stalks celery, chopped1 can diced tomatoes, 28 oz1 can garbanzo beans, drained4 cups chicken or vegetable broth2 cups water1 pound Kale, chopped2 Bay leaves3 small potatoes, diced
Directions
Slice chorizo into coins, brown in olive oil, drain on paper towel. Wipe out all but 1 tlbs. oil. Cook onion until translucent, add garlic, potatoes, celery, carrots and cook about 10 minutes, stiring occasionally. Add canned tomatoes, garbanzo beans, water, bay leaves. Bring to a boil. Add Kale (it will cook down), continue cooking 30 minutes. Serve with crusty whole wheat roll.
