Cannellini Beans With Onion & Garlic

2 cups dry cannellini beans6-7 cups tap water1 tblsp. olive oil1 clove garlic, minced1/2 medium onion, diced (about 1/2 cup)2 tablespoons pimento1 teaspoon salt1/2 teaspoon pepper1/2 teaspoon sugar1 teaspoon hot pepper sauce
Combine the dry beans and the 6-7 cups water in an oven-proof casserole pot with lid. Place in a 300 degree oven and bake for about 7-8 hours or until beans are soft.
While the beans are baking, saute the minced garlic and diced onion in the olive oil until soft, golden and fragrant - do not let get too brown; add the salt, pepper, tomato paste, sugar and pimentos, and hot sauce and stir to incorporate the ingredients and set the mixture aside.
When the beans are soft, remove from the oven and add the prepared onion/garlic mixture; stir gently to mix. Adjust seasoning if necessary.
Return to the oven for about 20 minutes.
