Zucchini Casserol

Ingredients
4 heaping cups zucchini, shredded1/2 cup cheddar cheese, shredded1 small onion, shredded1 cup Bisquick1/2 cup oil4 large eggssalt and pepper to taste
Directions
Shred zucchini
Shred cheese
Shred onion
(The above is done easiest in a food processor. However, an 'old fashioned' grater can be used.)

Combine oil, eggs, and bisquick.
Mix in zucchini, cheese, and onion.
Add salt and pepper to taste.

Bake in 13 x 9 casserole dish at 350 for 45 minutes. Check to see if done by inserting toothpick and seeing if it comes out clean.
