Healthy Turkey Lasagna

2 lbs. Italian seasoned ground turkey1 tsp. salt1 tsp. ground black pepper2 T. basil2 T. oregano1 tsp. minced garlic32 oz (3 cups) no salt added tomato sauce3 cups fat free cottage cheese4 egg whites1 cup (48 tsp) parmesan cheese3 cups fat free mozzarella cheese, shredded2 cups mushrooms, sliced and sauteed6 oz. healthy harvest whole wheat lasagna noodles, cooked and drained2 medium sized zuchinni, sliced lengthwise
Brown meat, add spices, garlic, onions and mushrooms. Add tomato sauce and parmesan and set aside. In a separate bowl, fold together the egg whites and cottage cheese. Use 1 large pan (9X13) or 2 smaller pans. Brush bottom and sides of pan with olive oil. Place 3-4 noodles in the bottom of pan, then place 1/3 of the meat mixture on top. Next layer 1 cup of mozzarella cheese, then half of the cottage cheese mixture. Layer the zuchinni next, followed by 1/3 of the meat mixture, 1 cup of the mozzarella, and the rest of the cottage cheese mixture. Finish off with the remaining noodles, the last of the meat mixture and top with 1 cup of the mozzarella cheese. Bake at 350 degrees for 1 hour. Let lasagna sit for 15 minutes before serving.
