Chickpea Cutlets (Vegan)

Ingredients
1 c cooked Chickpeas2 TB Olive Oil1/2 c Vital Wheat Gluten1/2 c Plain Bread Crumbs1TB Braggs Liquid Aminos (or soy sauce)2 cloves Garlic, pressed or grated1/2 tsp Lemon Zest1/2 tsp Thyme1/2 tsp Paprika1/2 tsp dried rubbed sageExtra Olive Oil for pan frying
Directions
Mash chickpeas and (first) olive oil together until no whole peas remain. Add remaining ingredients and knead until strings of gluten have formed. Preheat skillet over medium hit. Divide dough into four equal pieces. Knead each piece into roughly 6x4 rectangular cutlet shape. Pour extra oil in skillet. Place cutlets in skillet and cook for 6-7 minutes each side. They're ready when lightly browned and firm to touch.

    I enjoyed this recipe but found the flavours a little bland. I'd add different spices, less soy sauce and more chickpeas/less breadcrumbs next time. - 9/4/11
