Egg, fresh, 2 mediumRed Ripe Tomatoes, 1 medium whole Spinach, fresh, 1 cup Tofu, soft, 85 gramsMushrooms, fresh, 5 medium Dijon Mustard, 1 tspSpices
Cook the tofu and mushrooms on a skillet until almost ready, add veggies and cook until spinach is wilted.
Add eggs and mustard, scramble the whites until fully cooked, at the last minute break the yolks and turn the heat off.
Serve hot!
