TC Crockpot Lasagna (w/Eggplant)

Ingredients

Directions
Season and then brown the ground turkey in a nonstick pan coated with 1 tbls olive oil. Stir in red pepper flakes, basil, tomato sauce, eggplant, and water. In a bowl combine the egg substitute, ricotta, and parsley. Place enough meat sauce to cover the bottom of slow cooker. Top with 3 noodles, broken to cover the meat sauce. Cover noodles with meat sauce, then continue layering ricotta, meat sauce, mozzerella. End with a layer of noodles, sauce and top with slices of mozzerella. Cover and set slow cooker on low. Can cook safely all day.
