Baked Chicken Chili Brown Rice Casserole

Ingredients
2 cups cooked brown rice2 cups chili1-1 1/2 cups cooked, skinless, bonelss chicken; diced4 oz sharp cheddar; shreddedhandful of grape or cherry tomatoes, halved2 tsp basil/parsley/ or cilantro
Directions
Cook brown rice by instructionson bag or box

Pre-heat oven to 350 degrees F

Lightly oil an 8x8 inch baking dish or casserole

Layer the cooked brown rice in the bottom of the baking dish

Top with the chili, use all and any of the liquid/juices

Scatter chicken pieces all over the top

Add the halved tomatoes

Sprinkle with cheddar cheese and basil/parsley/or cilantro

Bake for about 30-35 minutes until the center is heated through, the cheese has melted, and the chili sauce is bubbing around the edges
