Kabee's Splenda Mocha Lava Cakes

Ingredients
Ghirardelli Semi Sweet Baking Chocolate - 4 oz packageUnsalted Butter - 8 TblsEgg, fresh, 2 large + 2Egg Yolks1/2 cup Splenda sugar substitute2 teaspoons flour2 tablespoons ground coffee or instant espresso
Directions
Preheat oven to 450 degrees. Spray four (4 oz) ramekins with no stick cooking spray. Put them on a cookie sheet and set aside. Put chocolate and unsalted butter into the top of a double boiler, over medium to low heat until soft and almost melted. Beat eggs, egg yolks and Splenda together in a mixing bowl until smooth. Whisk chocolate and butter together then SLOWLY to egg mixture, stirring until just combined. Whisk in flour and coffee. Divide batter between prepared ramekins and bake for only 6-8 minutes. Serve cake immediately.

I usually top with sugar free whipped topping with a light dusting of unsweetened cocoa powder.
