layered cranberry desert

Ingredients
2 pkg cranberry gelatin1.5 cups boiling water1 16 oz can whole cranberry sauce1.5 cups cold waterone third cup sugar8 tab. light benecol spread8 ounces light cream cheese1 carton 16 ounces cool free 1 15 oince mandarin orangesIn large bowl dissolve gelatin in boiling water. Stir in cranberruy sauce and cold water. Refrigerate for 45 minutes.Meanwhile in a gowl combine cracker crumbs, half of the sugar and benecol. Press into an ungreased 13-by 9 in pan. Refrigerate till set. In a small mixing bowl beat cream cheese and remaining sugar until smooth. Fold in half of the cool whipped topping. Spread over crust. Fold oranges into gelatin mixture; spoon over cream cheese layer. Refrigerate for 4 hours or until set. Cut into 15 servings; dollop with remaining whipped topping. YIELD 15 servings.
