Ingredients
Summer Squash, 2 medium Onions, raw, .5 cup, chopped 3 Hatch Green Chiles (Whole), 2 oz Beans, black, 1 cup 1.5 cups cooked Whole Grain Quinoa (0.5 cup dry)4 Tomato, grape 1 oz
Directions
Dice and saute first 3 ingredients. Combine with remaining ingredients. Serve warm or cold.
