Cheesy Chicken Quinoa Casserole

Ingredients
1 cup of Quinoa, dry (doesn't matter which brand)1 package of broccoli and cauliflower steamers (brand doesn't matter, I used Great Value to cut costs)3-4 wedges of Laughing Cow Light French Onion Cheese6 ounces of plain Greek yogurt (I use Oikos, Fage, or Athenos- whatever is your preference!)1/4 cup of Parmesan cheese, grated1 lb of chicken breast, no skin (I use 97%fat free)1 serving of reduced fat triscuits (7 crackers) crushed
Directions
Prepare Quinoa as directed on package. You can add more flavor by substituting some of the water with reduced sodium chicken broth if you prefer.

Steam broccoli and cauliflower in bag as directed on package.

Cook chicken however you prefer- I cooked mine with water and Mrs. Dash in the microwave until there was no pink left. Once cooked, chop or tear into small pieces.

Combine cooked Quinoa, broccoli and cauliflower, and chicken in casserole dish. mix well. Add Laughing Cow cheese wedges one at a time, mashing them and mixing in with mixture. It helps to do this while other ingredients are still hot to help soften and mix better. After cheese is mixed in, add 6 ounces of Greek yogurt and mix well. Sprinkle crushed Triscuits and parmesan cheese on top.

Bake at 425 degrees for 15 minutes, or until topping is browned.

Serve and enjoy!

Mix it up!- Try substituting fish in place of chicken, and mix up the vegetables to keep it interesting. If you aren't too crazy about Quinoa, try brown rice instead. Add in the spices and flavor it your way! Remember, herbs have no calories!

    This was delicious - a creamy, filling casserole that was great on a winter night. The family loved it Tasty but not heavy handed. I cooked the quinoa in chicken broth and added 1 extra wedge of Laughing cow. I used only a sprinkle of parmesan on the top (vice triscuit crumbs). - 1/19/14
