Vegan Pancakes---Actually good

Ingredients
1 egg replacer (Ener-G, prepared according to instructions)1 C Soymilk (I used plain)2 T canola oil1 t vanilla (pure) extract or paste1/2 t salt2 t baking powder1 C flourcinnamon, to tastefrozen unsweetened blueberries, fresh bananas, whatever you want
Directions
Make egg replacer and whip with whisk until frothy, mix together remaining ingredients (except fruit).

Drop onto hot griddle (non stick or sprayed w Pam or similar), when bubles appear, drop frozen blueberries individually onto the pancake and flip.

Serve with Earth Balance spread and pure maple syrup

Serving Size: Makes four pancakes or more silver dollars
