White Cheddar Rice Cake Tostadas

1 pound 96/4 Lean Ground Beef 1 package (1.13 pounds) Jennie O Ground Turkey1 10oz can RoTel Mild Diced TomatoesPaprika, Cumin, Chili Powder, Pepper, Season Salt - to taste8 Quaker White Cheddar Rice Cakes 1 1/3 cups Shredded Colby Jack8 Tbs Fat Free Sour Cream8 Tbs Pace Picante Sauceshredded lettuce, chopped tomato, chopped onion as desired for toppings (not included in nutrition info)
Cook meats together and drain. Add can of tomatoes and spices and simmer for 20 minutes or until most of juice from tomatoes is gone. Remove from heat.
Lay tostadas out on pan and sprinkle colby jack across the tops of each... about 1/6 cup on each. Layer the meat mixture on top of each. Layer lettuce, tomato, onion as desired and top with sour cream and salsa.
Recipe could be even healthier with a low fat cheese and only use ground turkey. I prefer to keep the few extra calories for the better flavor.
Serving Size: Makes 8 tostadas
