Candice's Veggie-Filled Beef Stew

Ingredients
1 lb beef for stewing (cut into chunks)1/2 medium onion2 tsp garlic1 tsp olive oil1 can diced italian style tomatoes1 small (6oz) can tomato paste1 can corn (drained)1 can lima beans (drained)2 cups green beans2 cups peas2 medium/large yukon gold potatoes (cut into big chunks)
Directions
In a large pot, saute the onion and garlic with the olive oil.
Add the beef and brown it.
Add the rest of the ingredients and let simmer for an hour or more.
