Batter:1 cup semolina1 cup white flour2 tsp saltpinch baking sodapinch of cayenne pepper2 cups buttermilkPeanut oil Topping;4 plum tomatoes, diced finely4 tbsp onion diced finely8 oz cheddar cheese, gratedpinch of cayenne pepperpinch of salt.
Combine flour, semolina, salt, pinch of cayenne and pinch of baking soda using a wire whisk. Slowly add buttermilk until the consistency of a pancake batter. Heat large griddle or skillet. Put one table spoon of oil on skillet and spread evenly. Put one slice of bread in the batter and turn until completely coated and place on the skillet, repeat with 3 additional slices of toast (cook 3 -4 at one time). Once one side is browned, remove onto cookie sheet. Add another table spoon of oil to pan and place uncooked side of battered bread on the skillet. Repeat for 4 remaining slices of bread. Preheat oven to to broil, high. Lay out cooked battered bread slices on a cookie sheet. Sprinkle each slice with chopped tomatoes and onions. Grate cheddar cheese on top. Sprinkle a dash of cayenne pepper and a dash of salt on each slice. Place under broiler until cheese has melted. Serve immediately.
