Crockpot Chicken Soup with Rice and Sausage

2 lbs. chicken breast3 Just Perfect sweet italian turkey sausage1/2 large onion, diced1/2 cup carrots, shredded2 stalks of celery, sliced2 cloves of garlic, minced8-10 cups Emeril's chicken stock1 can diced tomatos1/2 tsp ground fennel1/2 cup Trader Joe's Brown Rice Medley, uncookedsalt and pepper to taste
1. spray a crockpot with cooking spray. Layer on the bottom the chicken breast, turkey cut into bite sized pieces, and all of the veggies except the diced tomatoes. Add the chicken stock and cook on low for 7 hours.
2. Once 7 hours has passed take out the chicken and dice it or shred it. Put it back in and add the tomatoes, rice, salt and pepper to taste, and the fennel. Continue to cook another 2 hours.
3. Serve with bread, roll, or cornbread.
