Lentils with Spinach

Ingredients
1/2 cup dried red lentils1 cup chicken or vegetable broth1/4 t. garam masala1 T. olive oil1/4 small onion, chopped2 cloves garlic, minced5oz. pkg fresh baby spinachdash salt
Directions
Bring lentils, broth, and garam masala to a boil. Reduce heat, cover pan loosely, and simmer gently for 20 minutes or until tender.

When lentils are done, heat oil in a large skillet over medium heat. Add onions and stir until softened. Add garlic and cook, stirring, for about a minute. Add spinach and salt and toss until spinach is wilted.

Combine spinach mixture and lentils and serve.

Serving Size: Serves 2 as a main dish, 3-4 as a side dish
