Mushroom Salmon Rice with fresh veggie salsa

Ingredients
1 large Salmon fillet 1 cup Brown Rice1/2 cup Mushrooms sliced or chopped1 cup Scallions chopped1 cup cherry tomatoes1/4 cup red sweet pepper chopped1 tbsp Olive Oil2 tbsp Red Wine Vinegrette- no fat
Directions
Precook brown rice according to instructions.
Sear 1 large Salmon fillet in dry skillet. Break up Salmon and add mushrooms. Add olive oil and cook till fish is done.

Mix scallions, tomatoes, cilantro and red peppers with Red Wine Vinegrette.

Place Rice on plate. spoon fish and mushrooms over rice and reheat. Spoon cold veggie salsa on top. Serve.
