low fat scalloped potatoes

Ingredients
1 c. skim milk2 tsp cornstarch1/4 tsp salt1/4 tsp pepper2 lg potatoes1/4 c. chopped onion2 tbsp grated Parmesan cheese.Non-stick spray coating
Directions
For sauce, in a small saucepan stir together milk, cornstarch, salt and pepper. Cook and stir over medium heat until thickened and bubbly. Remove from heat.

Lightly spray the sides of a 1 1/2 quart casserole dish with non-stick coating. Peel potatoes and slice very thin. Layer half the potatoes and onion. Pour sauce over potato mixture. Sprinkle with Parmesan cheese.

Bake covered, in a 350 degree oven for 40 minutes. Uncover and bake 10 to 15 minutes more or until potatoes are tender.

    Overall a very good recipe, but for some reason it was very "peppery" and I did not add a whole 1/4 tsp. as the recipe suggested. Could have used more salt, less pepper. Still, a very good low fat scalloped potato recipe. - 10/2/12

    These were great and just the right amount for DH and me with a portion left over for lunch. I especially liked the consistency. I added leftover ham, cheddar instead of parmesan, and a vegetable on the side to make it a meal. It's definitely a keeper! - 3/11/10
