4 ea Zucchini, trimmed and sliced into 4 slices lengthwise1 tbsp Olive OilTo Taste Salt & Pepper1 cup Marinara Sauce1 cup Mozzarella Cheese, shredded1 serving Hormel Turkey Pepperoni, cut into 4thsAdd any other of your favorite toppings, but remember, this will change your calorie and carb counts!
1. Preheat oven to 450ºF.
2. Pat zucchini slices with paper towels to dry, and place on a baking sheet. Drizzle with olive oil, salt and pepper to taste.
3. Bake for about 10 minutes- until starting to brown, turing once.
4. Remove zucchini from oven and spoon about 1 tablespoon of sauce over each zucchini slice- until the entire slice is covered.
5. Sprinkle with approximately 1 to 2 tablespoons of mozzarella. Add toppings.
6. Bake for 15–20 minutes, until brown and bubbly!
