breakfast quiche cups

Ingredients
6 whole eggs2 T heavy cream3/4 c mozzarella cheese2 T green chiles2 T green onion1/4-1/2 C frozen spinach1/4 C red, yellow, or orange peppers1/2 t cuminsaltpepper
Directions
mix 6 eggs with 2 T heavy cream until well blended.
thaw a chunk of forzen spinach in strainer under warm water.
To egg mixture: add cheese, green onion, red, yellow, or orange peppers, green chiles, cumin, spinach, salt and pepper.
spoon into greased foil cupcake liners in 12 well muffin pan.
bake @ 350 for 20 min or until top is golden and puffed up in center. bake at 325 if pan is dark.
